



When you live one mile from your mother and your in-laws you wind up spending a lot of time together for the holidays. I bring this casserole to every occasion that I’m required to bring a dish to, Thanksgiving, brunch, whatever.
Sweet Potato Casserole*
Preheat oven to 350 degrees.
Throw all this into a mixer:
4 cans of sweet potatoes (drained)
1 cup sugar
1 cube margarine
2 eggs
1 tsp vanilla
1/3 cup milk (I use skim and have never had a problem)
1 tsp cinnamon
1/2 tsp nutmeg
Mix until mostly smooth. Spray a 9×13 dish with cooking spray and spread evenly.
Now for the yummy topping! In another bowl combine:
1 cup brown sugar (More sugar? Yes! MORE sugar – it’s your fill in the blank special day!)
1/2 cup flour
1/3 cup melted margarine**
1 cup pecans (I prefer crushed)
Spread mixture on top, slide this into the over and you’re done! Well, after you bake for 30 minutes.
*I have been told by my non-Okie friends that this is NOT a casserole, because casseroles have meat. And Velveeta.
** You may be tempted to mix the dry ingredients and then drizzle the melted butter on top but don’t. I tried it, and it’s horrible with pools of melted butter.
